  • 1 lb boneless skinless chicken breast
  • 2 cups fresh mushrooms (cremini or button)
  • 1 clove garlic (minced)
  • 3 sprigs thyme
  • 1 ½ cups dry white grape juice (unsweetened)
  • ½ cup seasoned flour
  • 2 tbs butter
  • 2 tbs olive oil
  • ½ cup heavy cream
  • ⅓ cup shredded asiago cheese
  • Salt and pepper to taste

Instructions

  1. Tenderize the chicken breasts to an even thickness of about ¼ inch.
  2. Heat butter and olive oil in a heavy skillet over medium heat. Dredge chicken in seasoned flour and sauté until golden brown on both sides; remove from skillet.
  3. In the same skillet, add mushrooms and garlic; sauté until mushrooms are browned.
  4. Deglaze with dry white grape juice, scraping up brown bits from the pan.
  5. Add thyme and return chicken to the skillet; cover and simmer for 15-20 minutes.
  6. Stir in heavy cream and asiago cheese until melted and combined; serve hot.
