  • 1/2 cup butter
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 whole egg + 2 egg whites
  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup mini vegan marshmallows
  • 1 cup semi-sweet chocolate chips
  • 1 cup packed light brown sugar

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a 9×13-inch baking pan with cooking spray.
  2. Cream butter, granulated sugar, one whole egg, two egg whites, and vanilla until smooth.
  3. Mix in flour, baking powder, and salt until combined; spread evenly in the prepared pan.
  4. Sprinkle vegan marshmallows and chocolate chips over the batter.
  5. Whip remaining egg whites until stiff peaks form; fold in brown sugar gently.
  6. Spread meringue over the top of the chocolate chips and marshmallows.
  7. Bake for 30-35 minutes until golden brown. Allow to cool completely before cutting into squares.
