  • 1¾ cups granulated sugar
  • ½ cup vegetable or canola oil
  • 2 large eggs (at room temperature)
  • 2 large egg whites (at room temperature)
  • 2½ teaspoons pure vanilla extract
  • ½ teaspoon almond extract (optional but highly recommended)
  • ⅔ cup sour cream
  • ¾ cup milk (preferably whole or 2%, at room temperature)
  • 3 cups fresh strawberries (sliced or diced, divided)
  • 2 tablespoons strawberry jam
  • 8 ounces cream cheese (softened to cool room temperature)
  • 1 cup powdered sugar
  • ¾ teaspoon vanilla extract
  • 2¼ cups heavy whipping cream (very cold, straight from the fridge)

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, mix sugar and oil; add eggs, extracts, sour cream, and milk. Combine well.
  4. Gradually combine the dry ingredients with the wet mixture until just mixed.
  5. Divide batter into prepared pans and bake for about 20 minutes or until a toothpick comes out clean.
  6. Cool cakes in pans for 10 minutes before transferring them to wire racks.
  7. Combine sliced strawberries with strawberry jam to macerate.
  8. For frosting, beat softened cream cheese with powdered sugar until smooth; gradually add heavy cream until soft peaks form.
  9. Once cakes are cooled, layer one cake on a plate, top with half the strawberries and whipped cream. Repeat with the second layer and finish decorating as desired.
