  • 1 cup graham cracker crumbs
  • 4 Tbsp unsalted butter (melted)
  • 16 oz full-fat cream cheese (softened)
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • Jarred caramel sauce
  • Chocolate ganache (½ cup semi-sweet chocolate chips & ÂĽ cup heavy whipped cream)
  • Chopped nuts (pecans)

Instructions

  1. Preheat oven to 325°F (160°C). In a bowl, mix graham cracker crumbs with melted butter until well combined. Press mixture into the bottom of a muffin tin to form crusts.
  2. Bake crusts for 8–10 minutes until golden brown. Allow cooling.
  3. In a mixing bowl, beat softened cream cheese and sugar until smooth. Add vanilla extract and eggs one at a time, blending well after each addition.
  4. Pour filling over cooled crusts in muffin tin and bake for 18–20 minutes until edges are set but centers remain slightly jiggly.
  5. Cool at room temperature for about 10 minutes before refrigerating for at least four hours.
  6. Prepare chocolate ganache by melting chocolate chips with heavy cream until smooth. Drizzle over chilled cheesecakes topped with caramel sauce and chopped pecans before serving.
