  • 4 tablespoons unsalted butter (melted)
  • 16 ounces cream cheese (room temperature)
  • 1/2 cup granulated sugar
  • 2 large eggs (room temperature)
  • 1/2 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1/2 cup semi-sweet chocolate chips
  • 3 tablespoons peanut butter
  • 2 tablespoons coconut oil

Instructions

  1. Preheat oven to 325°F (160°C). In a bowl, mix chocolate graham cracker crumbs, sugar, and melted butter. Press into cupcake liners.
  2. In another bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in peanut butter and vanilla.
  3. Spoon filling over crusts, leaving space for puffing during baking.
  4. Bake for about 17 minutes until set around the edges but still slightly jiggly in the center.
  5. Cool completely before refrigerating for at least two hours. Melt chocolate chips with peanut butter and coconut oil; drizzle over cooled cheesecakes before serving.
