  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 cup beef broth (or chicken broth)
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • Juice of 1 lime
  • Corn or flour tortillas
  • Optional toppings: diced tomatoes, chopped cilantro, avocado slices, shredded cheese, sour cream

Instructions

  1. Prepare by dicing the onion and mincing the garlic.
  2. Season the roast generously with salt, pepper, chili powder, cumin, smoked paprika, and oregano.
  3. Sear the seasoned roast in a skillet over medium-high heat until browned on all sides.

  5. For slow cooking: set on low for about 5 hours until fork-tender. For stovetop: simmer covered on low for about 2 hours.
  6. Shred the beef using two forks and return it to the pot to absorb juices.
