  • 1 lb flank steak (or NY strip/sirloin)
  • 1 pint grape or cherry tomatoes
  • ½ medium red onion
  • 2 tsp oil (avocado or olive)
  • 1 head romaine lettuce
  • 1 large cucumber
  • ⅓ cup pitted kalamata olives
  • 1 cup garlic hummus
  • ½ cup crumbled feta cheese
  • For the dressing: plain yogurt, olive oil, lemon juice, garlic, dried oregano, dried dill, salt, fresh mint

Instructions

  1. Prepare the herbed-yogurt dressing by whisking together yogurt, olive oil, lemon juice, minced garlic, oregano, dill, salt, and chopped mint.
  2. Preheat your grill to high heat (450°F).
  3. Pat dry the flank steak and season with salt and pepper. Skewer cherry tomatoes and onion pieces.
  4. Grill the veggies for about 5-8 minutes until soft. Grill the steak for about 4-5 minutes per side for medium-rare.
  5. Let the steak rest before slicing.
  6. Assemble bowls with chopped romaine lettuce topped with sliced steak, grilled veggies, dollops of hummus, cucumbers, olives, and crumbled feta.
  7. Drizzle with herbed-yogurt dressing and garnish as desired.
