1 lb sirloin steak
3 tbsp olive oil
2 garlic cloves (minced)
1 cup cherry tomatoes (halved)
1 cucumber (diced)
2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
1 cup plain Greek yogurt
Fresh herbs (parsley or dill)
Instructions
Marinate the sirloin: Combine olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper in a bowl. Coat steak evenly with marinade and refrigerate for at least 30 minutes.
Prepare tzatziki sauce: In another bowl, mix Greek yogurt with grated cucumber (squeezed dry), lemon juice, minced garlic, chopped dill, salt, and pepper until smooth. Chill while steak marinates.
