  • 3 tbsp olive oil
  • 2 garlic cloves (minced)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
  • 1 cup plain Greek yogurt
  • Fresh herbs (parsley or dill)

Instructions

  1. Marinate the sirloin: Combine olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper in a bowl. Coat steak evenly with marinade and refrigerate for at least 30 minutes.
  2. Prepare tzatziki sauce: In another bowl, mix Greek yogurt with grated cucumber (squeezed dry), lemon juice, minced garlic, chopped dill, salt, and pepper until smooth. Chill while steak marinates.
  3. Cook the steak: Heat a skillet over medium-high heat. Sear marinated steak for about 4–5 minutes per side until desired doneness. Let it rest before slicing thinly against the grain.
