  • 1 ½ cups water
  • 1 medium English cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ½ medium red onion, thinly sliced
  • ½ cup pitted Kalamata olives
  • ½ cup feta cheese, crumbled (or vegan cheese alternative)
  • ½ cup fresh parsley, chopped
  • Juice of 1 lemon (about 3 tbsp)
  • 4 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water to remove any bitterness. Combine with water in a saucepan and bring to a boil. Reduce heat and cover; simmer until all water is absorbed (about 15 minutes).
  2. While the quinoa cooks, prepare the vegetables: dice cucumber, halve cherry tomatoes, slice red onion, and chop parsley.
  3. In a bowl or jar, whisk together lemon juice, olive oil, salt, and pepper to create the dressing.
  4. Once the quinoa has cooled slightly, fluff with a fork in a large mixing bowl.
  5. Add prepared vegetables to the quinoa and toss gently. Stir in Kalamata olives and crumble feta on top.
  6. Drizzle dressing over the salad and toss lightly until combined. For best flavor, let sit for at least 30 minutes before serving.
