  • 1/4 cup diced red onion
  • 1 cup cooked quinoa
  • 2 cooked chicken breasts (diced)
  • 1/2 cup pepperoncini
  • 1/3 cup feta cheese (optional)
  • 1/3 cup olive oil
  • 3 tablespoons apple cider vinegar
  • 1 1/2 teaspoons Dijon mustard
  • Juice from 1 lemon
  • 2 teaspoons minced garlic
  • 3/4 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
