  • 2 mini cucumbers (chopped)
  • 1 tablespoon red onion (chopped)
  • 1 tablespoon fresh oregano (chopped)
  • 1/2 red bell pepper (chopped)
  • 1 cup grape or cherry tomatoes (halved)
  • 1/2 cup Kalamata olives
  • 3.5 oz feta cheese
  • 2 tablespoons olive oil
  • 1/2 tablespoon lemon juice
  • 1 clove garlic (minced)

Instructions

  1. Rinse and drain chickpeas; place them in a large bowl.
  2. Chop cucumbers, red onion, oregano, bell pepper, and halve the tomatoes; add to the bowl.
  3. Stir in Kalamata olives and crumbled feta cheese.
