  • 2 boneless, skinless chicken breasts (about 1 pound)
  • 2 medium-sized zucchinis
  • 2 tablespoons extra virgin olive oil
  • 4 cloves garlic (minced)
  • Juice and zest of 1 lemon
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • ½ cup grated Parmesan or crumbled feta cheese
  • Salt & pepper (to taste)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season chicken with salt, pepper, half the oregano, basil, and thyme.
  3. Slice zucchinis into rounds or half-moons; toss with olive oil, garlic, lemon juice, zest, remaining herbs, salt, and pepper.
  4. Layer seasoned chicken in a baking dish, surround with zucchini.
  5. Bake for 25-30 minutes until chicken reaches 165°F (75°C). Add cheese during the last five minutes.
  6. Let rest for 5-10 minutes before serving.
