  • 3 tablespoons olive oil
  • 1 medium onion, diced
  • 1 tablespoon garlic, minced
  • 1 cup baby spinach, chopped
  • 1 lb. ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup Greek yogurt
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Sauté onion in olive oil over medium heat until translucent (about 5 minutes). Add garlic and cook for an additional 30 seconds.
  2. In a large bowl, mix sautéed onion and garlic with spinach, chicken, breadcrumbs, yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper.
  3. Shape the mixture into approximately eight patties (½ inch thick).
  4. Heat remaining olive oil in a skillet over medium heat. Cook patties for about 5-6 minutes on each side until golden brown and fully cooked through.
  5. Drain on paper towels and serve warm with your favorite garnishes.
