  • 16 ounces super firm tofu
  • 4 tablespoons cornstarch
  • 2 tablespoons nutritional yeast
  • 5 cloves garlic (minced)
  • 1/2 cup sun-dried tomatoes (chopped)
  • 2 cups baby spinach (sliced or chopped)
  • 1 cup vegetable broth
  • 1 cup cashew cream

Instructions

  1. Press the tofu for at least 20 minutes to remove excess moisture. Cut into cubes.
  2. In a bowl, mix cornstarch, nutritional yeast, salt, and pepper. Coat tofu cubes in this mixture.
  3. Heat avocado oil in a skillet over medium-high heat and sauté the tofu until golden brown on all sides (about 7 minutes).
  4. Remove tofu and sauté garlic and sun-dried tomatoes in the same skillet for about 3 minutes.
  5. Add vegetable broth and tomato paste; simmer for 5 minutes.
  6. Stir in cashew cream and spinach; cook until spinach wilts.
  7. Fold in crispy tofu before serving.
