  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 45 portions of pasta (spaghetti, linguine, or bucatini)
  • 2 tbsp salted butter
  • 3 garlic cloves, minced
  • 1 cup chicken broth
  • 1/2 tsp dried thyme
  • 1/2 tsp dried sage
  • 1/2 tsp crushed red pepper flakes
  • 1/2 cup canned pumpkin purée
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup grated Mozzarella cheese
  • Chopped fresh parsley or micro greens for garnish

Instructions

  1. Season chicken with salt and pepper. In a skillet over medium-high heat, add olive oil and cook the chicken for about 6–7 minutes per side until golden brown.
  2. Cook pasta according to package instructions until al dente, reserving about half a cup of pasta water before draining.
  3. In the same skillet, melt butter and sauté garlic until fragrant. Add chicken broth, thyme, sage, and red pepper flakes; simmer for about 2 minutes. Stir in pumpkin purée and heavy cream.
  4. Once bubbling, mix in Parmesan cheese until melted. Slice the cooked chicken and add it back to the skillet along with drained pasta; toss well and adjust sauce consistency with reserved pasta water if needed.
  5. Serve with grated Mozzarella on top and garnish with parsley or micro greens.
