  • 1 1/2 cups granulated white sugar
  • 3 eggs, at room temperature
  • 1 tbsp vanilla bean paste
  • 1 cup buttermilk
  • 1/2 cup whole milk
  • 2 tbsp Earl Grey tea
  • 1/2 tbsp culinary lavender
  • 1/2 cup sweetened condensed milk
  • 1/2 tsp vanilla bean paste
  • 1 tbsp culinary lavender (for frosting)
  • 1 cup unsalted butter, softened
  • 8 oz cream cheese, cold
  • 2 cups powdered sugar
  • 1 tsp vanilla bean paste
  • (optional: purple food coloring)

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, whisk together flour, baking powder, baking soda, salt, Earl Grey tea leaves, and culinary lavender.
  2. In another bowl, cream softened butter and sugar until fluffy. Beat in eggs one at a time along with vanilla bean paste.
  3. Gradually mix in buttermilk and whole milk until smooth; do not overmix.
  4. Pour batter into cake pans and bake for about 40 minutes until a toothpick comes out clean.
  5. Prepare the soaking mixture by combining brewed Earl Grey tea with sweetened condensed milk and vanilla bean paste.
  6. Poke holes in the cooled cake layers and generously drizzle the soaking mixture on top.
  7. For frosting, beat together softened butter and cold cream cheese until smooth; add powdered sugar followed by culinary lavender and vanilla bean paste.
  8. Frost cooled cake layers as desired.
