  • 2 cans (28 oz) diced tomatoes
  • 1 can (14 oz) red kidney beans, drained and rinsed
  • 1½ cups frozen corn
  • 3½ cups vegetable broth
  • 1½ cups dried green lentils
  • 2 tablespoons chili powder
  • 2 teaspoons cumin
  • Salt and pepper to taste

  1. In a large skillet, sauté chopped onion in vegetable broth over medium heat for about 5 minutes until translucent. Add minced garlic and cook for an additional minute.
  2. Transfer the onion-garlic mixture to a slow cooker. Add chopped sweet potatoes, diced tomatoes (with juice), kidney beans, frozen corn, lentils, chili powder, cumin, salt, and pepper.
  3. Pour vegetable broth over the ingredients and stir to combine.
  4. Cover and cook on low heat for about 8 hours or high heat for about 4 hours until lentils are tender.
