  • 1 1/2 cups unbleached flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup powdered sugar (for glaze)
  • 5 teaspoons lemon juice (fresh, for glaze)
  • Drops of vanilla (optional, for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until fluffy.
  3. Add the egg, vanilla extract, lemon juice, and lemon zest; mix until combined.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this mixture to the wet ingredients until just combined.
  5. Using a cookie scoop or spoon, portion out dough balls about 1.5 inches apart on the prepared baking sheet.
