Ingredients
Scale
1/2 cup unsalted butter (room temperature)
1 cup granulated sugar
1 large egg (room temperature)
1 teaspoon vanilla extract
1 teaspoon lemon juice (fresh)
1 teaspoon lemon zest (fresh)
1 1/2 cups unbleached flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup powdered sugar (for glaze)
5 teaspoons lemon juice (fresh, for glaze)
Drops of vanilla (optional, for glaze)
Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a mixing bowl, cream together the softened butter and granulated sugar until fluffy.
Add the egg, vanilla extract, lemon juice, and lemon zest; mix until combined.
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this mixture to the wet ingredients until just combined.
Using a cookie scoop or spoon, portion out dough balls about 1.5 inches apart on the prepared baking sheet.
Bake for about 7 minutes or until edges are lightly golden while centers remain soft.
Allow cookies to cool on the baking sheet for about 10 minutes before transferring them to a cooling rack.
For the glaze, mix powdered sugar with fresh lemon juice and optional vanilla until smooth; drizzle over cooled cookies.
