  • 2 cups raspberries (fresh or frozen)
  • 2 1/4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1/4 teaspoon salt
  • 1 cup unsalted butter (melted)
  • 1 1/2 cups granulated sugar
  • 1/3 cup cornstarch
  • 6 large eggs
  • 1/4 cup reduced raspberry puree (from 2 cups raspberries)
  • 3/4 cup lemon juice (freshly squeezed)

Instructions

  1. Prepare the Raspberry Puree: Blend fresh or thawed raspberries until smooth. Strain through a fine mesh sieve to remove seeds. Reduce 2 cups of puree over medium heat until you have about 1/4 cup.
  2. Make the Shortbread Crust: In a bowl, mix flour, sugar, cornstarch, and salt. Add melted butter and combine until crumbly. Press into the bottom of a lined baking dish.
  3. Prepare the Custard Filling: Whisk together sugar and cornstarch; add eggs one at a time, followed by lemon juice and reduced raspberry puree. Mix until smooth.
  4. Bake: Pour the custard over the crust and bake at 350°F (175°C) for about 45 minutes or until set. Let cool completely before cutting into squares.
