  • 1 cup quinoa
  • 2 cups water
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water. In a saucepan, combine rinsed quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer until water is absorbed (about 15 minutes). Fluff with a fork.
  2. Allow the quinoa to cool to room temperature.
  3. In a large bowl, mix cooked quinoa with chickpeas, cucumber, red onion, and parsley.
  4. In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic powder, salt, and pepper.
  5. Pour dressing over the salad mixture and toss gently until well combined.
  6. Serve chilled or at room temperature.
