  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon water
  • 1 tablespoon fresh parsley, chopped
  • 1 small garlic clove, grated
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice (divided)
  • ¼ teaspoon fine salt
  • ¼ teaspoon black pepper
  • 150 grams fresh mozzarella (or shredded firm mozzarella)
  • 2 tablespoons grated parmesan cheese

Instructions

  1. Prepare your dough according to your preferred method and preheat the oven.
  2. If using fresh mozzarella in water, slice it and pat dry to prevent sogginess.
  3. Shape the dough into a rectangle on parchment paper.
  4. Combine olive oil, water, parsley, garlic, lemon zest, lemon juice, salt, and pepper in a jar; shake well.
  5. Make dimples in the dough and pour the brine over it before adding mozzarella pieces.
  6. Bake on a preheated stone for 8–10 minutes until golden.
  7. Drizzle with remaining lemon juice and top with parmesan and parsley before serving.
