  • 1 large egg (room temperature)
  • 1 ½ cups powdered sugar (for glaze)
  • 2 to 3 tbsp fresh lemon juice (for glaze)
  • ½ tsp lavender extract (optional, for glaze)
  • 3 to 4 drops of purple food coloring (for glaze)

Instructions

  1. Preheat your oven to 350°F (180°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, cornstarch, and baking powder.
  3. In a large mixing bowl, cream together the butter, sugar, lemon zest, and dried lavender until fluffy.
  4. Add the egg and mix until fully incorporated.
  5. Gradually blend in the dry ingredients until just combined.
  6. Scoop tablespoon-sized balls onto prepared sheets, spaced apart.
  7. Gently flatten each ball to about one-third inch thick.
  8. Bake for 12-15 minutes until edges are golden and centers are set.
  9. Cool on the baking sheet for five minutes before transferring to a wire rack.
  10. In a medium bowl, whisk together powdered sugar, fresh lemon juice, and optional lavender extract until you achieve a thick but pourable consistency for the glaze.
