  • 1 1/4 cups white granulated sugar
  • 1/4 cup light brown sugar
  • 1 tbsp lemon zest
  • 1 large egg
  • 1 tbsp lemon juice (fresh)
  • 2 3/4 cups all-purpose flour (sifted)
  • 3/4 cup wild frozen blueberries
  • For coating: 1/2 cup white granulated sugar
  • 2 tsp lemon zest

Instructions

  1. Preheat oven to 350°F (180°C). Cream together the softened butter, white sugar, and brown sugar until light and fluffy.
  2. Add the egg, lemon zest, lemon juice, and vanilla extract; mix until smooth.
  3. In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add to the wet mixture until just combined.
  4. Gently fold in the wild blueberries.
  5. Chill the dough in the refrigerator for about 30 minutes.
  6. Roll chilled dough into small balls and coat in lemon-sugar mixture.
  7. Bake on a parchment-lined baking sheet for about 17 minutes or until lightly golden.
