  • 4 salmon fillets (5 oz each), skin removed
  • Salt and pepper, to taste
  • 1 1/2 cups ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh basil, finely chopped
  • 2 teaspoons lemon zest
  • 1/2 pound asparagus, trimmed
  • 1 tablespoon butter
  • 1/2 cup chicken broth
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons cornstarch mixed with 2 teaspoons water

Instructions

  1. Preheat your oven to 425°F. Season salmon fillets with salt and pepper.
  2. In a bowl, mix ricotta, Parmesan, basil, lemon zest, and additional salt and pepper until combined.
  3. Spread the filling over each fillet and place a few asparagus spears on top before rolling them tightly with the seam side down.
  4. Place the rolls seam-side down on a greased baking sheet and bake for 15-20 minutes until they flake easily with a fork.
  5. For the sauce, melt butter in a small saucepan over medium heat. Add chicken broth and lemon juice; stir in cornstarch mixture until thickened (about 3-5 minutes).
  6. Serve the warm salmon rolls drizzled with lemon sauce.
