  • 1 1/2 cups walnuts, raw and unsalted
  • 1/2 cup pumpkin seeds, unshelled
  • 6 cups salad greens
  • 2 cups frisée leaves
  • 12 apples or pears, diced
  • 2 avocados, sliced
  • 2 cups pomegranate seeds
  • 1 cup crumbled cheese (blue, feta, or goat cheese)
  • 1/3 cup honey or maple syrup
  • 1/3 cup virgin olive oil
  • 1/4 cup balsamic or apple cider vinegar
  • 2 teaspoons dijon mustard
  • 2 tablespoons honey
  • 1 tablespoon fig jam
  • 2 teaspoons orange peel zest
  • 2 tablespoons fresh orange juice
  • Salt and black pepper to taste
  • Chili flakes

Instructions

  1. Preheat your oven to 350°F (175°C). Spread walnuts and pumpkin seeds on a baking sheet and toast for about 10 minutes until golden brown.
  2. Wash and dry the salad greens and frisée leaves. Tear them into bite-sized pieces and place in a large bowl.
  3. Dice apples or pears and slice avocados; add them to the bowl.
  4. In a small bowl, whisk together honey (or maple syrup), olive oil, balsamic vinegar (or apple cider vinegar), Dijon mustard, fig jam, orange zest, orange juice, salt, black pepper, and chili flakes.
  5. Once toasted, mix nuts and seeds into the salad along with pomegranate seeds and crumbled cheese. Drizzle with dressing and toss gently before serving.
