  • 2 1/2 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon kosher salt
  • 8 oz unsalted butter (diced and very cold)
  • 69 tablespoons ice water
  • 2 large honey crisp apples (peeled and diced)
  • 3 tablespoons salted butter
  • 18 oz fresh blackberries
  • 2/3 cup brown sugar

Instructions

  1. For the pie crust, mix flour, sugar, and salt in a stand mixer. Add cold butter until it resembles coarse sand. Gradually add ice water until combined.
  2. Chill the dough in the refrigerator for at least 30 minutes.
  3. Prepare fillings by caramelizing apples in butter with spices and sugar until syrupy. Roast blackberries with sugar and vanilla until thickened.
  4. Roll out chilled dough and cut into pumpkin shapes; cut faces on half.
  5. Assemble by placing filling on uncut shapes, sealing edges with egg wash.
  6. Bake at 375°F for around 25 minutes until golden brown.
