  • 1 cup Onion, diced
  • 1 tablespoon minced garlic
  • 12 Jalapeno Peppers, diced
  • 1 teaspoon Chipotle Chili Powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1/2 teaspoon Cumin
  • 1/2 teaspoon Black pepper
  • 2 cups Red Salsa
  • 1 (10-ounce) can Enchilada Sauce
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (15-ounce) can corn, drained
  • 2 boxes Jiffy cornbread Mix
  • 2 Eggs
  • 2/3 cup Milk

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, brown the ground beef until fully cooked; drain excess fat.
  3. Sauté diced onion, garlic, and jalapeños until onions are translucent.
  4. Stir in spices: chipotle chili powder, paprika, salt, cumin, and black pepper.
  5. Add red salsa and enchilada sauce; let simmer for 5 minutes.
  6. Mix in rinsed black beans and drained corn; transfer to a baking dish.
  7. In a bowl, combine Jiffy cornbread mix with eggs and milk until smooth; spread over filling.
  8. Bake for 25-30 minutes until the cornbread crust is golden brown.
  9. Let cool slightly before garnishing with sour cream, chopped tomatoes or pico de gallo, cilantro, and guacamole.
