  • 4 tablespoons unsalted butter
  • 4 tablespoons flour
  • 3 cups milk
  • 1 cup heavy cream
  • 1 bay leaf
  • ¼ teaspoon ground cloves
  • Salt and black pepper to taste
  • 7 oz aged Irish cheddar cheese, grated
  • 1 cup Swiss cheese, grated
  • 7 oz Dubliner cheese, grated
  • ¼ teaspoon ground nutmeg

Instructions

  1. Cook the cavatappi pasta according to package instructions until al dente. Drain and set aside.
  2. In a medium saucepan over low heat, melt the butter. Gradually whisk in the flour to create a roux.
  3. Slowly add the milk and cream to the roux while whisking continuously until smooth. Add the bay leaf and ground cloves; let simmer for about 25 minutes.
  4. Remove the bay leaf and whisk in the aged cheddar, Swiss cheese, and Dubliner cheese until fully melted. Season with salt, black pepper, and nutmeg.
  5. In a large bowl, combine the cooked pasta with the cheese sauce. Mix well.
  6. Transfer to a baking dish, top with remaining Dubliner cheese, and bake at 375°F (190°C) for about 10 minutes or until bubbly and golden brown.
