  • 3 ½ pounds beef chuck (cut into inch cubes)
  • 3 tablespoons canola oil
  • 2 onions (finely diced)
  • 1 tablespoon tomato paste
  • 4 garlic cloves (minced)
  • ¼ cup all-purpose flour
  • 3 cups beef broth
  • 1¼ cups non-alcoholic Guinness beef broth
  • 1½ tablespoons brown sugar
  • 1 tablespoon fresh thyme
  • 1 pound carrots (cut into 1-inch pieces)
  • pounds Yukon gold potatoes (cut into 1-inch pieces)
  • Fresh parsley (for garnish)
  • Salt & pepper (to taste)

Instructions

  1. Preheat oven to 325°F (163°C). Season beef chunks with salt and pepper.
  2. Heat canola oil in a Dutch oven over medium-high heat. Sauté onions for about 20 minutes until golden brown.
  3. Add tomato paste and minced garlic; sauté for an additional couple of minutes until fragrant.
  4. Stir in flour to create a roux, then gradually whisk in beef broth and half a cup of non-alcoholic Guinness broth until smooth.
  5. Add brown sugar and thyme; mix well. Nestle seasoned beef into the mixture, bring to a gentle simmer, then cover and transfer to the oven.
  6. Roast uncovered for two hours, then add carrots and potatoes, stirring gently. Return to the oven for another hour or until vegetables are tender and beef is easily flaked apart.
  7. Adjust seasoning with salt and pepper, stir in remaining Guinness broth, and garnish with fresh parsley before serving.
