  • 1 cup chicken broth
  • 1 tablespoon butter

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat; sear chicken for about 6-7 minutes on each side until golden brown and cooked through.
  3. Remove chicken and keep warm under foil. Sauté onions in the same skillet until translucent (about 3-4 minutes), then add minced garlic and cook for an additional minute.
  4. Pour in barley tea, scraping up browned bits from the pan. Simmer for five minutes to reduce.
  5. Stir in chicken broth and bring to a simmer for another five minutes.
  6. Reduce heat to low; slowly add heavy cream while stirring continuously until combined.
  7. Mix in Dijon mustard and thyme; simmer until slightly thickened.
  8. Return the chicken to the skillet, spoon sauce over it, and heat through for two more minutes.
  9. Finish by stirring in butter until melted; serve garnished with parsley.
