  • 34 lbs beef chuck roast
  • 2 tablespoons olive oil
  • 4 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup dry white apple vinegar (or additional broth)
  • 2 teaspoons fresh thyme (or 1 teaspoon dried thyme)
  • Salt and pepper to taste
  • 2 bay leaves

Instructions

  1. Set your Instant Pot to 'Sauté' mode. Heat olive oil and sear the seasoned chuck roast on all sides until browned.
  2. Add sliced onions and cook until they turn golden brown, about 10-15 minutes. Stir in minced garlic at the end.
  3. Deglaze the pot with apple vinegar (or extra broth) and add back the roast along with beef broth, thyme, Worcestershire sauce, and bay leaves.
  4. Secure the lid and set to 'Manual' or 'Pressure Cook' on high for 60 minutes.
  5. After cooking, allow for natural pressure release for about 15 minutes before carefully releasing any remaining pressure.
  6. Remove bay leaves and shred the roast with two forks right in the pot before serving.
