Ingredients

Scale
  • 1 ¾ cups all-purpose flour
  • 2 cups sugar
  • ¾ cup cocoa powder
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 cup hot coffee
  • 8 oz semisweet or bittersweet chocolate, chopped
  • 1 cup heavy cream
  • 2 tbsp butter

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, mix the buttermilk, vegetable oil, eggs, and vanilla until combined.
  4. Combine wet ingredients into dry ingredients gradually and then stir in the hot coffee until smooth.
  5. Divide the batter evenly between the prepared pans and tap them gently to release air bubbles.
  6. Bake for 30 to 35 minutes or until a toothpick inserted comes out clean.
  7. Let cool in pans for about 10 minutes before transferring to wire racks to cool completely.
  8. For the ganache, heat heavy cream until just boiling; pour over chopped chocolate and let sit for two minutes before stirring until smooth. Add butter and vanilla extract; let cool until spreadable.
  9. Frost cooled cakes with ganache as desired.
