  • 2 8-ounce packages cream cheese
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 16 ounces smoked gouda cheese (shredded, divided)
  • 1 pound cooked chicken (chopped or use crispy chickpeas for a vegetarian option)
  • 3 scallions (chopped, divided)
  • Freshly ground black pepper to taste

Instructions

  1. Preheat the oven to 400°F.
  2. In a large bowl, soften the cream cheese in the microwave for about 30 seconds. Whisk in the mayonnaise and sour cream until smooth.
  3. Reserve 1/3 cup of shredded gouda, 1/4 cup of chicken or chickpeas, and 2 tablespoons of scallions. Mix the remaining ingredients into the creamy base and season with black pepper.
  4. Transfer the mixture to an oven-proof dish and top with reserved gouda and chicken/chickpeas. Bake for about 30 minutes until golden brown and bubbly.
  5. Add reserved scallions on top before serving.
