  • 2 cups chicken or vegetable stock
  • 5 cups arugula
  • 1/4 cup parsley, freshly chopped
  • 1 large apple
  • 1/4 cup toasted pepitas
  • 2 shallots, thinly sliced
  • 1/3 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 tablespoon dijon mustard
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon freshly ground black pepper + more for topping

Instructions

  1. Cook the quinoa by bringing it to a boil in stock and then simmering until liquid is absorbed (15-20 minutes). Cool in a bowl.
  2. For crispy shallots, fry sliced shallots in olive oil over medium heat until golden (15-20 minutes). Drain and sprinkle with salt.
  3. Whisk together the vinaigrette ingredients: cooled oil, vinegar, honey, mustard, salt, and pepper.
  4. In a large bowl, combine quinoa, arugula, parsley, apple slices, pepitas, and crispy shallots. Drizzle with vinaigrette and toss gently.
