  • 2 cups long-grain white rice
  • 1 pound boneless, skinless chicken thighs or breasts
  • 1/4 cup honey
  • 1/4 cup fresh lime juice
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup black beans (drained and rinsed)
  • 1 avocado (diced)
  • Fresh cilantro (chopped)
  • Lime wedges (for serving)

Instructions

  1. Cook the rice in a medium pot by combining 2 cups of rice with 4 cups of water. Bring to a boil, then reduce heat and cover for 18–20 minutes until fluffy.
  2. In a large bowl, whisk together honey, lime juice, soy sauce, garlic powder, onion powder, salt, and pepper.
  3. Marinate the chicken in half of the marinade for at least 15 minutes.
  4. Heat olive oil in a large skillet over medium-high heat. Sear the marinated chicken for about 5–7 minutes per side until golden brown and cooked through (internal temperature of 165°F).
  5. Add corn and black beans to the skillet and cook until heated through (about 3–4 minutes).
  6. Let the chicken rest before slicing against the grain into strips.
  7. Assemble your bowls by layering rice first, then adding sliced chicken and the corn-black bean mixture. Top with diced avocado and garnish with cilantro.
