  • ¼ cup strawberry puree for frosting
  • 1 teaspoon vanilla extract for frosting
  • 2 tablespoons heavy cream (or milk, if needed) for frosting
  • Pinch of salt for frosting

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a medium bowl, whisk together the cake flour, baking powder, and salt; set aside.
  3. In a large mixing bowl, beat the softened butter and granulated sugar together on high speed until light and fluffy, about 3 minutes.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract until combined.
  5. In a small bowl, combine the whole milk and sour cream until smooth.
  6. Gradually add the dry ingredients to the butter mixture in three additions, alternating this with the milk mixture. Begin and end with dry ingredients. Mix just until combined.
  7. Gently fold in the strawberry puree and finely chopped fresh strawberries until evenly distributed throughout the batter.
  8. Divide the batter evenly between the prepared pans. Smooth out the tops. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow cakes to cool in their pans for about 10 minutes before transferring them to a wire rack to cool completely before frosting.
  10. To make the frosting, beat softened butter on high speed until smooth and creamy, about 2 minutes. Gradually add powdered sugar one cup at a time while mixing well after each addition.
  11. Pour in strawberry puree and vanilla extract into your frosting mixture. Beat until fully combined.
  12. If needed, adjust frosting consistency by adding heavy cream one tablespoon at a time. If too thin, add more powdered sugar as necessary.
  13. Add a pinch of salt to enhance flavor. Beat on high speed for another 2 minutes until fluffy.
  14. Place one cooled cake layer on a serving plate. Spread a generous amount of frosting over it before placing the second layer on top.
