  • 1/4 tsp ground ginger

  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 cup canned pumpkin puree (not pumpkin pie filling)
  • 1/2 cup vegetable oil
  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract (pure)
  • 8 oz cream cheese (softened)
  • 1/2 cup unsalted butter (softened)
  • 34 cups powdered sugar (sifted)
  • 1 1/2 tsp vanilla extract (pure)
  • 1/8 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mix softened cream cheese with granulated sugar until smooth. Add egg yolk and vanilla; set aside.
  3. In another bowl, whisk together flour, baking soda, salt, and spices.
  4. In a separate bowl, combine granulated sugar, brown sugar, pumpkin puree, vegetable oil, eggs, and vanilla until smooth.
  5. Gently fold the dry ingredients into the wet mixture until just combined.
  6. Fill muffin cups halfway with batter, add a spoonful of cream cheese filling in the center, then top off with more batter.
  7. Bake for 18–22 minutes or until a toothpick comes out clean from the muffin portion.
