  • 2 tbsp kosher salt
  • 1/2 tsp baking soda
  • Freshly ground black pepper, to taste
  • 5 tbsp extra-virgin olive oil
  • 1 small bunch rosemary leaves, finely chopped
  • 3 medium garlic cloves, minced
  • 1 small handful fresh parsley leaves, chopped

Instructions

  1. Preheat your oven to 425°F (220°C). Peel and cut potatoes into large chunks; rinse briefly under cold water.
  2. Boil salted water in a large pot and add the potato chunks with baking soda. Cook for 10-12 minutes until slightly tender but firm.
  3. Drain potatoes well and let them steam dry for about 5 minutes.
  4. In a large bowl, mix drained potatoes with olive oil, salt, black pepper, minced garlic, and chopped rosemary until evenly coated.
