  • 1/4 cup unsalted sweet cream butter (softened) for filling
  • 1/2 cup smooth peanut butter for filling
  • 1 1/2 cups powdered sugar for filling
  • 2 tablespoons whole milk for filling
  • 1/4 teaspoon pure vanilla extract for filling

Instructions

  1. Preheat your oven to 350°F (175°C). In one bowl, whisk together flour, baking soda, and salt.
  2. In another bowl, beat softened butter and brown sugar until light and fluffy.
  3. Add the smooth peanut butter, egg, and vanilla extract into the butter-sugar mixture and mix until combined.
  4. Gradually incorporate the dry ingredients into the wet mixture without overmixing.
  5. Roll tablespoon-sized portions of dough into balls and coat them in sugar before placing on a baking sheet.
  6. Bake for about 10 minutes until lightly golden around the edges; cool on wire racks.
  7. For the filling, mix softened butter, peanut butter, powdered sugar, milk, and vanilla extract until creamy.
  8. Spread filling between two cookies to assemble.
