  • 2 large grapefruits
  • 4 cups of sugar
  • 4 cups of water
  • 1 cup of sugar for covering the slices

Instructions

  1. Prepare the grapefruits by cutting them into wedges and carefully removing the peels.
  2. Place the peels in a pot with about an inch of water, bring to a boil, then strain. Repeat this process four times to reduce bitterness.
  3. In the same pot, combine 4 cups of water with 4 cups of sugar until dissolved. Add the grapefruit peels and boil for about 30 minutes until translucent.
  4. Strain the peels over a heatproof bowl to capture the syrup, then coat the hot peels in 1 cup of sugar.
  5. Allow the coated slices to cool completely on a plate before enjoying.
