Ingredients

Scale
  • 2 cups warm water (105-115°F)
  • 1 tablespoon active dry yeast
  • 1/4 cup honey or sugar
  • 2 teaspoons salt
  • 2 tablespoons canola or vegetable oil
  • 45 1/2 cups all-purpose or bread flour

Instructions

  1. In a large bowl, combine the warm water and yeast with a pinch of honey or sugar; let it sit for 5-10 minutes until foamy.
  2. Add remaining honey or sugar, salt, oil, and about 3 cups of flour; mix until combined.
  3. Gradually add more flour until the dough pulls away from the sides but remains slightly sticky.
  4. Knead the dough for 4-5 minutes in a stand mixer or by hand for about 5-8 minutes on a floured surface.
  5. Place in an oiled bowl, cover, and let rise in a warm area until doubled in size (about 1½ hours).
  6. Punch down the dough, divide it into two equal pieces, shape into logs, and place in greased loaf pans.
  7. Cover and let rise again until about an inch above pan edges (45 minutes to an hour).
  8. Preheat oven to 350°F (175°C) and bake for 30-33 minutes until golden brown.
  9. Cool on wire racks before slicing.
