  • 2 large carrots
  • 1 small yellow squash
  • 1 small zucchini
  • 1 medium red bell pepper
  • 68 Roma tomatoes
  • 1/2 medium onion
  • 46 oz white mushrooms
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Preheat oven to 425°F and line a baking sheet with parchment paper.
  2. Prepare the garlic by cutting off the top, drizzling with olive oil, and wrapping in foil.
  3. Chop the carrots, squash, zucchini, bell pepper, tomatoes, mushrooms (leave onion halved).
  4. Spread all veggies on the baking sheet; drizzle with olive oil and season.
  5. Roast for 35-45 minutes until softened; stir halfway through.
  6. Blend roasted veggies with garlic until smooth; add water or broth if needed.
  7. Serve over cooked pasta and enjoy!
