  • 1 cup granulated sugar
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups fresh peaches, peeled and diced
  • 2 tablespoons cornstarch
  • ¼ cup brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. In a large bowl, mix the flour, granulated sugar, baking powder, and salt. Cut in cold butter until crumbly.
  3. Add eggs and vanilla extract; mix gently until just combined. Press two-thirds of the mixture into the bottom of the prepared pan.
  4. Toss diced peaches with cornstarch and brown sugar; spread over the crust.
  5. Crumble remaining dough over the peach layer and bake for approximately 35 minutes or until golden brown.
  6. Cool completely before cutting into squares.
