  • 1 tbsp butter
  • 1 leek
  • 2 carrots (cut into large pieces)
  • 2 stalks celery (diced)
  • 2 cloves garlic (pressed)
  • 2 tbsp flour
  • 1 liter chicken stock
  • 250g cooked turkey
  • 2 large potatoes (cut into large pieces)
  • 2 bay leaves
  • 1 tbsp fresh thyme leaves
  • Salt and pepper to taste
  • Optional: 80ml double cream

Instructions

  1. In a large Dutch oven, melt butter over medium heat. Cook leeks, carrots, celery, and thyme for about 5 minutes until softened. Add garlic and cook for another minute.
  2. Sprinkle in flour and mix well before gradually adding chicken stock while scraping the bottom of the pot. Bring to a gentle boil; season with salt and pepper.
  3. Add potatoes, cooked turkey, and bay leaves. Stir gently before covering and transferring to a preheated oven at 180C/350F for about 45 minutes.
  4. Remove from oven; if desired, stir in double cream for added richness. Garnish with chopped parsley before serving.
