  • 105 grams whole grain spelt flour (3/4 cup)
  • 1 teaspoon sea salt
  • 1/2 cup milk of choice
  • 5 tablespoons unsalted butter, melted
  • 3 tablespoons white sugar
  • 1 large egg and 1 large egg yolk
  • 1/4 cup active sourdough starter or discard
  • 6 ounces softened cream cheese
  • 1/4 cup white sugar for filling
  • 1 teaspoon pure vanilla essence
  • 1–2 teaspoons fresh lemon juice

Instructions

  1. Prepare the Dough: In a bowl, mix flours and salt. In another bowl, whisk warm milk, melted butter, sugar, eggs, and sourdough discard. Combine both mixtures until smooth.
  2. Let It Rise: Cover dough with a towel and allow it to rise in a warm spot until doubled in size (about an hour).
  3. Prepare the Filling: Mix softened cream cheese, sugar, flour, vanilla essence, salt, and lemon juice until smooth.
  4. Shape Your Kolaches: Roll out the dough and cut into squares or circles. Place a spoonful of filling in the center before folding or pinching closed.
  5. Bake: Preheat oven to 350°F (175°C) and bake for about 20 minutes until golden brown.
