Instructions

  1. Prepare your baking tray by lining it with wax or parchment paper.
  2. In a bowl, mix together pumpkin purée, pumpkin spice, salt, and liquid stevia until well combined. Gradually incorporate the oat flour.
  3. Roll the mixture into bite-sized balls and place them on the prepared tray.
  4. Melt dark chocolate in a microwave-safe bowl in 30-second intervals until fully melted.
  5. Dip each truffle into the melted chocolate using forks and let excess drip off before placing back on the tray.
  6. Chill in the freezer for 5-10 minutes or refrigerate for 15-20 minutes until set.
