  • 1 block feta cheese (7 oz)
  • 1.5 cups cherry tomatoes
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt to taste
  • Black pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Wash and halve or quarter baby potatoes.
  2. In a large baking dish, combine halved potatoes and cherry tomatoes. Add minced garlic, olive oil, dried oregano, salt, and black pepper; toss well.
  3. Place the block of feta in the center of the dish and drizzle with olive oil.
  4. Bake for 35–40 minutes until potatoes are golden brown and tender; stir halfway through cooking.
  5. After removing from the oven, gently stir melted feta into vegetables until combined. Garnish with fresh herbs if desired.
