  • 1 small onion (finely diced)
  • 2 cloves garlic (minced)
  • 2 cups Yukon yellow potatoes (peeled and diced)
  • 2 cans beef broth (14.5 oz each)
  • 1 can condensed tomato soup (10 oz)
  • 1 can petite diced tomatoes (15 oz)
  • 1 bag frozen mixed vegetables (16 oz)
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon salt
  • 1 teaspoon dried parsley
  • ½ teaspoon dried basil

Instructions

  1. In a large pot over medium-high heat, brown the ground beef with the diced onion, minced garlic, and salt until fully cooked. Drain any excess fat.
  2. Add the chopped potatoes, beef broth, tomato soup, diced tomatoes (with juices), frozen vegetables, Worcestershire sauce, and seasonings to the pot. Stir well.
  3. Bring the mixture to a boil, then reduce heat to medium-low and cover the pot. Let it simmer for at least 30 minutes to allow flavors to meld.
  4. Taste the soup before serving and adjust seasoning if needed. Serve hot.
