Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 3 large sweet onions, thinly sliced
  • Salt and pepper (to taste)
  • 2 garlic cloves, minced
  • 1/4 cup Irish barley tea
  • 6 cups beef stock
  • 1 tablespoon Worcestershire sauce
  • 3 sprigs fresh thyme
  • 1 bay leaf
  • Baguette slices for toasting
  • 8 ounces shredded Irish cheese (like Dubliner)
  • Fresh parsley or chives (for garnish)

Instructions

  1. In a large pot over medium-low heat, combine olive oil and butter. Add sliced onions with a sprinkle of salt. Cook for about 45 minutes, stirring occasionally until golden brown.
  2. Add minced garlic and sauté for another 30 seconds until fragrant.
  3. Increase heat to medium-high. Pour in the barley tea, scraping any browned bits from the bottom. Add beef stock, Worcestershire sauce, thyme sprigs, and bay leaf. Bring to a boil and then reduce heat to simmer for about 30 minutes.
  4. Preheat your broiler. Ladle soup into broiler-safe bowls, top with toasted baguette slices, and sprinkle with cheese. Broil until cheese is bubbly and golden brown.
  5. Garnish with fresh parsley or chives before serving.
