  • 1 lb. lean ground beef
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 3 carrots (sliced)
  • 2 stalks celery (sliced)
  • 2 medium potatoes (diced)
  • 1 teaspoon Italian seasoning
  • 1 bay leaf
  • 4 cups beef broth
  • 1 15 oz. can diced tomatoes (with juice)
  • 1 10.5 oz. can condensed tomato soup
  • 3 tablespoons tomato paste
  • 1 14.5 oz. can cut green beans
  • 1 15.25 oz. can corn (drained)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a Dutch oven over medium heat. Brown the ground beef with diced onion and minced garlic until fully cooked.
  2. Add sliced carrots and celery; sauté until slightly softened.
  3. Stir in Italian seasoning and bay leaf for flavor enhancement.
  4. Pour in beef broth, diced potatoes, diced tomatoes (with juice), condensed tomato soup, and tomato paste. Mix well.
  5. Finally, add cut green beans and corn. Bring to a boil, then reduce heat and simmer for 35–40 minutes until veggies are tender.
